Congratulations and thank you for purchasing our oven-ready Beef Wellington! We have taken a center cut portion of Beef Tenderloin, seasoned, seared, and wrapped in our house made mushroom duxelles, prosciutto, and puff pastry. It has been frozen; we recommend taking it out the morning before (8 hours before cooking) to thaw in the fridge.

Our Beef Wellington is large enough to feed 6-8 people.

You Will Need the Following:

  • Egg wash (2 Egg yolks, 1 tbsp water, whisked together)
  • Baking Sheet
  • Meat thermometer

How to Prepare Your Beef Wellington

TIP: For best results, thaw in the refrigerator overnight.

TIP: It’s always best to use a meat thermometer. For a medium-rare center, we recommend removing the Wellington when the internal temperature reaches 115°F.

  1. Preheat oven to 350°F WITH baking sheet inside.
  2. Brush Egg wash on the outside of Wellington.
  3. Once the oven reaches temperature, remove the baking sheet with an oven mitt and cover it with a high smoke point oil such as canola, grape seed, or vegetable oil. Be careful; the tray will be hot. You can use a paper towel to distribute the oil evenly.
  4. Place THAWED Beef Wellington on the baking sheet and place it on the middle shelf of the oven.
  5. Bake until the crust is golden brown and the meat thermometer reaches your desired temperature. This is usually about 40-50 minutes for a medium-rare center.
  6. Remove from the oven, cover with foil, and allow to rest for 15-20 minutes before slicing.
  7. Slice with a sharp, smooth edge knife or serrated bread knife.

Remember, these times are estimates, and it’s always a good idea to check the product while cooking to ensure it’s not overcooked. Enjoy!

If Still Frozen:

  1. Preheat oven to 425°F.
  2. Place FROZEN pastry-wrapped roast (REMOVE PLASTIC WRAP) in a roasting pan (do not thaw prior to cooking).
  3. Bake roast for 45 minutes, reduce heat to 400°F, and bake for 45 minutes longer for medium-rare to medium. Bake roast to a minimum internal temperature of 120°F.
