Wagyu Beef Tri-Tips
A wagyu tri-tip is typically a 2 1/2 pound piece of sirloin prized for its taste and versatility. It makes a delicious roast or serves as an alternative to flank for use as London Broil. They are especially popular on the west coast where huge tri tip cook offs are popular. The key for tri tip enjoyment is a low, slow cook (reverse sear is ideal or sous vide) and to make sure the slicing is done correctly; this means directly against the grain.
