Pork Spare Ribs

Our lean and meaty spare ribs are “St. Louis” style, meaning they have been trimmed of excess fat, bone, and gristle. We remove the membrane upon request as well. Each slab weighs around 2-1/2 to 3 pounds, contains 11 to 14 bones, and feeds 2-3 people. We can also provide you with slabs that are checked for shiners and straight bones in case you’re using them for a barbecue competition.
