BERKSHIRE PORK RIB CHOPS
Our center cut Pork Rib Chops taste like a USDA Prime Steak. Each Berkshire Pork Chop is full of dense marbling and has amazing flavor. This pork is unlike any sold elsewhere because of how well it’s raised and the fact that the fat has not been bred out of it. These bone-in chops can be cut thick or thin and taste fantastic either way.

BERKSHIRE BONE-IN PORK ROAST
The whole rib section of our organic pork usually weighs 5-6 pounds and feeds up to 8 adults. It’s a wonderful roast which can be made into a crown for special occasions.

We cut these oval chops from a boneless center cut loin. They’re perfect as an entrée or for sandwiches.

The whole loin intact will comfortably feed up to eight. Some people prefer to have it cut in half and tied together. Others prefer to have a pocket cut into the roast for stuffing. Still some customers have us make a hole throughout the center of the meat. All preparations lead to the same conclusion—a delectable roast that will surely please the crowd at your table.

PORK SPARE RIBS
Our lean and meaty spare ribs are “St. Louis” style meaning that they have been trimmed of excess fat, bone, and gristle. We remove the membrane as well. Each slab weighs 2- 2 ½ pounds, contains 11 to 14 bones, and feeds 1-2 people. We can also provide you with slabs that are checked for shiners and straight bones in case you’re using them for barbecue competition.

PORK BABY BACK RIBS

Individual pork tenders typically weigh around 12-16 ounces and are miniature versions of beef tender. Prized for both their leaness and tenderness, they are excellent when marinated and grilled or cut into medallions. One pork tender feeds two adults.

Pork Butt is actually from the shoulder and an ideal cut for making barbecued or pulled pork. Pork Butts are very popular for smoking and slow roasting. Our pork butts weigh in the 8-10 lb range, have the skin removed and contain a few light blade bones. If you compete in barbecue competition, we can find you pork butts with a large “money muscle.”
