POULTRY



Most poultry produced in this country is given growth hormones, scalded in hot water to facilitate feather removal, and then frozen before being shipped to market. These factors account for why supermarket chicken is bland and dry.
Mister Brisket’s chickens eat a diet of corn and meal. They’re dipped in cool water to aid the removal of feathers but never scalded. Moreover, our chicken comes to us fresh. These differences ensure our poultry products have more flavor than any chicken you’ve ever eaten.

CHICKEN BREASTS
(bone-in, boneless or boneless and skinless)
Perhaps no item has brought us more recognition than our fabulous chicken breasts. We take large whole breasts, weigh them with the bone in and skin on and then process them any way you like. Typically we sell them at a minimum of ten to an order but for best pricing buy a "full bag"—our term for 25 lbs worth of breasts (weighed bone in, skin on ) which yields around 18 full (or 36 half breasts), depending upon sizing. All breasts are wrapped individually for freezing and keep very well.

ITALIAN FRYERS
These small whole chickens weigh roughly 2 _ pounds and are perfect for either roasting or grilling. The meat is tender and succulent. Each chicken feeds two.

BROILERS
Also known as fryers, these chickens are roughly 3 _ pounds and are sold either whole, halved or cut up. Perfect for fried chicken, paprikash or any dish where you want cut up pieces.

CAPONS
A true capon is a delectable eating experience for the family at holiday time. Each bird typically weighs in the range of seven pounds and comfortably feeds six.

PULLETS/SOUP CHICKENS
We have terrific five to six pounders available for your oven or your soup pot. Specify if you want them whole or cut-up.

CHICKEN STIR-FRY
We take our chicken breasts, remove the bones and skin, then cut them up into thin strips for your favorite stir-fry dish. Sold by the pound.

GROUND CHICKEN
A low fat product made from ground up boneless and skinless breasts. Sold by the pound.

CHICKEN LEGS
Whole chicken legs consist of the thigh and drumstick attached. They’re an inexpensive and delicious item for the kids or anyone who likes dark meat.

THIGHS AND DRUMSTICKS
The two halves of a whole chicken leg. Drumsticks are a kid favorite due to the fact they are best eaten by hand.
Thighs, a very underrated cut, are a staple of southern style barbecue. For a change of pace, have them de-boned and use them in stir-fry.

WINGS
We carry large, fresh whole wings. A fun item for the grill or pan frying.

TURKEY BREAST
We purvey Empire brand turkey breasts as they are absolutely fabulous. Typically weighing six to seven pounds, our turkey breasts make an inexpensive, lean tasty roast. Can be made boneless at your request.

WHOLE TURKEYS
Empire kosher turkeys are fabulous and we sell several tons of them each Thanksgiving with no complaints. These natural, non-self basting turkeys will shock you with their tremendous flavor and ease of preparation. They are sold frozen in sizes ranging from 12 to 30 pounds.

GROUND TURKEY
Just as with our chicken, we grind turkey breast meat only and grind it finely twice. Sold by the pound.

TURKEY BURGERS
Our turkey burgers are made only from finely ground turkey breast. Just like our beef burgers, they’re sold frozen in packages of twelve. Worth trying even if you can’t imagine yourself liking one.

CHICKEN KEBABS
We take boneless, skinless breasts, cut them up and place them on wooden skewers. Comes plain or in a fabulous Italian style marinade.

DUCKS
Our whole ducklings weigh 5-6 pounds and are sensational.

DUCK BREASTS
We sell them individually with each boneless pair weighing around 14 ounces.

GEESE
A Christmas favorite, ours weigh 8-10 pounds and are outstanding.
