Fresh Catch of the Week

Black Cod--$16.95/lb

This is a lovely fish with a buttery flavor that does well either baked or on the grill.  Simply dust it with a little olive oil, a smidge of salt and pepper, then bake for 12-15 minutes at 325 degrees.   Squeeze a bit of lemon and you have a marvelous meal.  When grilling, wrap in foil as it does better with indirect heat. 

 

Tasmanian Salmon (organic)

A wonderful salmon filet that is raised in a healthy fashion.  Very tasty and a good "fix" for those craving Wild King Salmon. This fish is on sale for one more week at $15.95/lb

 

The ever popular Wild King Salmon filets which we love to sell have finally dipped in price.  We encourage you to try some now as it has dropped $4 per pound--to $21.95/lb.  Hopefully this trend continues.

Red Snapper

This fish is wild caught and absolutely delicious.  Each filet typically weighs 10-12 oz.  Snapper does well when pan fried but may be grilled as well.  Here's an easy recipe for the grill:

4 Red Snapper Filets (around 1 lb apiece)

 6 Tbs Butter
• 3 Tsp. Garlic-five cloves finely chopped
• 3 Limes
• 1 Tsp. Hunters Seafood Seasoning

Melt butter and saute garlic in it until soft, approximately 3 to 5 minutes. Cut in half 2 limes and squeeze the lime juice into the garlic butter. Using a basting brush, coat both sides of each snapper fillets with the butter mixture. Sprinkle fish seasoning and salt evenly over snapper fillets to season. Place snapper fillets directly on your tinfoil-covered grill & grill snapper fillets for about 10 minutes, basting occasionally with the remaining butter sauce. Carefully turn the fish on the grill and cook another 10 minutes. When completely cooked, the flesh should be opaque in color and easy to flake with a fork. Garnish snapper with thin slices of the 3rd lime. 1/2 Tsp. Salt

Onaga Snapper--$18.50/lb (pictured below)

Onaga comes from deep waters near the Hawaiian coast.  It's availability is generally limited to the winter months.  There is tremendous variance in size with this fish but most of our filets should range between 1-2 lbs.  Onaga can be prepared in a variety of ways including baking, steaming and grilling.
